In 1962, in Perugino, the provincial capital of Umbria, a teenage Giuseppe Pagliaricci set about mastering the art of traditional country cooking. More than 40 years on, he's wiser, considerably wealthier and living here in Perth, but his allegiance to simple, home-style Italian cooking hasn't faltered. You can taste it in everything from the signature charcoal-grilled baby goat chops and the pan-fried garlic tiger prawns, to the borlotti bean soup and the house-made jams in the desserts. A lot of thought has been put into the 80-strong wine list and the impressive wall-mounted display of vintage labels. Adding the finishing touches to his elegant but unpretentious fine-diner, his wife, son and daughter offer a warm welcome in the foyer and friendly, attentive service in the stunning glass-roofed main dining area.
