A microbrewery, restaurant, bar and live music venue all in one, the Principal is indeed a vibrant and happening spot in Midland. Aside from the obligatory home brews available on tap, you can also get a quirky cocktail if you're "Peachy Keen" or "Dark and Stormy" (the names of two of the top cocktail gems). The pub food is diverse and interesting as it incorporates tried-and-true classics like grilled lamb rump, pumpkin gnocchi and beer-battered fish and chips, as well as more specialised inclusions like beef tataki, duck and pork sausages, and almond and saffron-crusted chicken strips.
