Maylands Hotel Maylands This is definitely one of the more modish hotel refurbishments around town. Local interior designer Francesca B Cerone has ritzed up the Maylands while still respecting the building's 1883 heritage, achieving the wow factor without the wank factor.

A bar separates two levels of dining, with the upper level family-friendly. Its gleaming jarrah floorboards look great, but with scraping chairs and 'kid acoustics' it can be a little on the noisy side. Things get more sophisticated in the lower area. Gorgeous leather Chesterfields and beautifully upholstered chairs provide lush seating. Walls are washed in blue L.E.D. lighting. The chandeliers twinkling above are Swarovski (and fresh from New York, by the way).

From the kitchen comes classy seafood and prime quality meat dishes. Lobster and wagyu beef top the list (in price, too, at $80 a pop). Pan-fried bobby veal is partnered by a brandy and amaretto duxelle, finished with a creamy glaze. Scallops pan-fried with garlic and chives on grilled mushrooms and melted parmesan are sprinkled with crispy prosciutto. Paupiettes of steamed Port Lincoln whiting with Atlantic salmon mousse are topped with gulf prawns and splashed with a light seafood veloute. Chocolate fig and hazelnut tart brings a nice finish. more
