Yum cha here is always special: the dumplings, in their many incarnations, are flavoursome and always taste freshly cooked, which, on reflection, they must be given the frantically busy nature of the venue and the huge volumes of customers they turn over. Dunk a scallop and green vegie dumpling threaded with hints of garlic in soy and chilli sauce and wave one of the cart-bearers over for another plate of prawn dumplings.

The fried dumplings here are superb. Getting the right proportion of chopped chilli-infused oil into your dipping bowl of soy sauce is a bit of an art, but whiles the time away appropriately before the food comes out.

The $7 short soup is cluttered with subtly flavoured wontons vying for space in the clear, shallot-laced broth. Scoop them up with a large spoon and douse them in the red vinegar before tipping each one whole into your mouth. Yum.
