Chef and owner Matt Byrne's deceptively simple lunch menu is steeped in classic mod-Oz offerings with subtle zests sprinkled sparingly. For dinner, the same menu is a great excuse for the impressive wine list. Take, for example, the Atlantic salmon steak served on bok choy and red capsicum with soy and fresh ginger. While light and effervescent on the palate, this dish allows several accompanying wines, depending upon the mood and occasion. For around $30, there is a great 2004 Bethany Kangaroo Island sav blanc which would supplement and accompany the fish to a point, or the slightly woodier 2003 Zarephath Chardonnay. Light, bright, airy, yet cosy and warm, Zita's (named for the chef's mother-in-law we hear) is very Carlton, with its class blend of continental and modern leanings, and well worth the short stroll up Rathdowne.
