With a mission to bring authentic Indian home cooking to Sydney, Zaaffran chef Vikrant Kapoor (formerly of the famous Raffles in Singapore) combines traditional flavours with contemporary presentation. He offers dishes such as the paneer makhan marsala - Indian cottage cheese simmered in an onion-tomato marsala with ginger, chilli and coriander; or the nirali tarkari chettinad - a melange of seasonal exotic vegetables in a green tomato sauce with pepper, fennel, coriander, turmeric and ginger. Zaaffran also has a selection of seafood choices such as karahi jheenga - tiger prawns in a peppery onion-tomato marsala with coriander, red chilli and garlic.
