In its 130-plus years of existence, the Waterloo has seen many changes. For one, women are now allowed inside - but the latest revolution is one of food rather than social equality. With an art deco renovation and a kitchen turning out modern gastro-pub meals, the latest revamp of this venerable pub has seen it become one of the top dining choices in the Valley.
The undressed tables and darkwood chairs give the Waterloo an endearing informality, while the fare states in no uncertain terms that this kitchen knows where it is and where it has come from. The requisite pub staples are well represented; dishes such as tender salt and pepper squid and the more recent tempura prawns make up the bulk of tapas/starters before moving on to more substantial fare. Whole baby barramundi and a creamy mushroom pappardelle with cavalo nero are just some of the contemporary offerings coming out of this modern kitchen.
