Located within Blue Skies Dining, Waterline Restaurant offers a more upmarket dining experience with great views of the surrounding marina and river. The menu is the same as that found at Blue Skies: a seafood-centric selection, with global influences emerging in dishes like the salt and pepper calamari on a Vietnamese salad with a lime nam jim and Japanese yuzu mayonnaise. Steaks are also high on Waterline's menu, including the char-grilled rump eye on a smoked paprika and sour cream mash with fresh asparagus spears and bearnaise sauce. A more formal alternative to the main cafe atmosphere, Waterline establishes a tranquil environment for private functions, group dinners and romantic escapades.
