The Victorian establishment once home to Two Chefs on Stanley has reopened as Verde Restaurant with new owners and a different look. Co-owner Vince Squillance played a major part in its design, having previously lent his architectural skill to such establishments as the Mean Fiddler. While there has been a drastic change to the interior, the original style is respected and still maintains a presence in the building's new embellished form. Exposed ceilings, tiled walls and bronze mirrors give the ground floor restaurant the life of a classic Italian eatery. There are two outdoor courtyards and a well-stocked bar upstairs for those who wish to carry on after dinner. This fusion of traditional and modern is reflected in the menu. Squillance's cousin Antonio Ruggerino uses recipes handed down through the family for generations and handled with a contemporary touch. His favourites include the pan-fried baby squid on baked salted cod; and snapper with saffron pappardelle, baby capers, peas and salsa verde.
