Uygur is a singularly unique style of cuisine. The product of Chinese and Kazakhstani cultures mingling together, it is part of China's great diversity.
As regional cuisines go, Uygur isn't that obscure if you are in the CBD, but it's not exactly what you'd expect to find in suburban Dandenong. Thankfully, no-one told Hamit Kurban, owner of Uyghur Cuisine, and the young entrepreneur went ahead and set up this gem of a diner. Now southern dandies (Dandenong residents) can enjoy such regional delicacies as lagman (hand-pulled noodles), charcoal-grilled kebab skewers and Asian-inspired beef goulash.
