Some cafes offer a few single origins but Bondi's newest little roasting house takes it to the nth degree by only serving one: Sumatran mandheling.
The bean of choice lies close to the heart of owner Mulyady Sutopo, who is originally from Medan in Sumatra. With his 1kg roaster humming away he serves up decadently rich espressos and even a few cold-drip infusions that will have any coffee boffin purring.
