Making a mark on the populous Jetty Strip restaurant scene in Coffs, The Watermark Brasserie keeps its focus on healthy meals with fresh ingredients and a melange of fusion flavours. Chef Nelly Trillon isn't afraid of a bit of experimentation, infusing her modern Australian menu with Asian, Mediterranean and European inflections, as seen in dishes such as the Malaysian duck, featuring duckling Maryland in sweetened soy and coriander sauce with rice and snow pears, and the Watermark mezze plate, including feta, olives, dolmades, dips and toast crackers.
You could even say that Watermark's specialty lies in its hefty share plates, most notably the teasingly titled Naked Seafood Platter - named so since there's no crumbs and no batter - offering a healthier slant on the nautical smorgasbord experience, featuring grilled salmon, steamed prawns and oysters. Trillon has crafted a menu that is mostly gluten-free and a healthier alternative all around.
The Watermark experience is made sweeter by its simple layout and comfortable timber chairs and tables scattered inside and under the shade in the open air.
