Since the change of ownership at the Stag, the first impression one gets of the new venue isn't just the tongue-in-cheek, plywood model stag head behind the waiter's station or the plush new furnishings, but an overwhelming sense of being welcome in a space operated by people with a passion for what they do. Carrying on the tradition of a dining room that has been serving customers for more than 160 years can be a daunting prospect, but new owners Liz and Tanya have managed this feat with alacrity and aplomb.
The carefully crafted menu incorporates a number of organic and biodynamic items and simply sings with the local produce on offer. The dry-aged, grass-fed Quinlan's rump with marrow butter and salsa verde epitomises the food philosophy of elegant simplicity here.
