Like in all other industries, who chooses to work for a person in hospitality speaks volumes for them. So when Michael Lambie and Scott Borg put the call out for friends to join them at their latest venture, it's no surprise that Melbourne's hospo elite came flocking.

Naturally, many of those pros came direct from Borg and Lambie's old stomping ground, Taxi (we're confident the CBD stalwart will recover), including ex-head somm Alex Owens. Together the charismatic trio have turned the old ET's into a smart casual drinking and dining den. The menu exudes Lambie's signature style of creating elegance in the simplest of meals, while the wine list is a balanced and considered thing of beauty.
