By now you've probably already heard about the new Post Office Hotel. Tex Perkins, Pat and Shannon from Dallas Crane and others bought a pub in Coburg and made it their own.
The Beast of Bourbon and friends have done a laudable job restoring this old beauty with a smart art deco motif, but a good renovation and celebrity owners will only take you so far. To keep people coming back in droves you have to offer a good product. Enter Troy Payne.
The former head chef of MoMo has taken over the running of this kitchen and is having a ball doing it. His short and punchy menu ranges from boisterous flavours to subtle nuances and back again in only a handful of dishes.
Entrees and mains are bold and inviting but it's the dessert menu where Payne's creativity and whimsy truly come to the fore. Be sure to save room for afters, which could be anything from a hot date doughnut with spicy chocolate sauce or a candied pumpkin kebab.
