Diners of Sydney breathe a huge sigh of relief, because Ross and Sunny Lusted have joined the fray of the harbour city's dining scene once more.
When ex-Rockpool head chef Ross Lusted set off to see the world, he was considered by many to be the best chef Sydney ever lost. Now, 10 years later, he and partner Sunny are back, with all their new-found culinary experiences from Asia, Europe and the US in tow.
In partnership with the Fink Group - those smart cookies responsible for perennial favourites Quay and Otto - the Lusteds now have a space of their own to carve out a niche in the Sydney dining scene.
Expect to see Lusted's signature, meticulously crafted cuisine enhanced and augmented by the influences of his diverse travels. The great American barbecue comes through in an entree of charcoal grilled king prawns, while the Cantonese classic white cut chicken gets the Lusted treatment among the brief main offerings.
The exceptional thing about Lusted's food, and the reason Sydney diners should rejoice in his return, is that he has the ability to take so many varied influences and turn them into one cohesive meal. That in itself is a rare gift worth experiencing.
