One of the Best
We'd had the dinner reservation booked for nearly 12 months, a birthday dinner for my wife. The wait was certainly worth it. It was expensive when you compare it to your average run of the mill dinner, but this was something special. Chilled corn soup with a soy caramel cream was a perfect starter. The kingfish and blackbean was mouth watering and the sea urchin steamed custard was a taste sensation. The signature dish lived up to its reputation. The ocean trout was subtle but flavoursome and the avruga and fennel complemented it so well, and the dressed salad served alongside was fantastic. The conbu crust was just amazing. The spanner crab with junsai was unbeleivable. The meat dishes were just as good. If anything could be faulted, the veal could have done with a little more seasoning. The desserts were the hihlight of the meal. First the hay infused icecream with sorrel granita played wonderful games with our minds and tastebuds. The lightly creme brulee'd bread and butter pudding was just divine. Finally, the chocolate fondant and chocolate parfait were exquisite. The service was just as good, water glasses always filled, and not being a big wine drinker, the selection of Felton Road Pinot Noir to accompany my meat dishes was just perfect even if a little on the expensive side. We were always welcomed and treated as highly as everyone else in the room. The ambience was great, a little noisier than Aria and Quay, but still somehow tranquil. My wife and I both felt that this dinner was way above what we had experienced at Aria and on par with Quay. We would gladly head back to tetsuyas again.

Good but nothing special
Like everyone else I was expecting something special from Tetsuyas. And like many others I was disappointed. In brief, the food was very nice, but no better than you could get in any number of restaurants in any city in Australia for less than half the price.
Some of the dishes were better than others, however the overall menu seemed to promise more than it delivered. None of the dishes delivered knock-out flavours. Don't get me wrong, you'd be very happy with this meal for $70, just not for $200.
I also found the service a bit cold, but others seem to have had good experiences so maybe we just got a bad night/waiter.
Overall, if you want to try the Tets experience then go, but if you're trying to decide if it's worth the high price, my advice is that it isn't. With the number of quality restaurants around these days, you can get better food for significantly less.

Superb experience
I went with friends to a fantastic lunch and could not fault the food or service. We were asked at the beginning of the meal if anybody had any allergies, dislikes, preferences and then our menu was constructed. It certainly was different from others in the restaurant, as other reveiwers have noted, because some diners had previously eaten certain dishes and so they varied the offerings to give some variety, new temptations. The kitchen produced a superb array of dishes and even a special dessert of blue cheese bavarois that was made at the last minute, as it is one of my favourites, and wasn't on the menu. The combinations of flavours and textures was oustanding, the quality of the produce was excellent & we left very well satisfied. The wine list is well constructed, but even better is that they allow BYO - it is the best BYO in Australia. There is no doubt that this is the best restaurant in Australia and well worth the price (especially when compared to other restaurants in the world's Top 10!).

Wasn't mind-blowing as everyone made out to be
A beautiful meal it was, but not as revelationary as I was expecting, or had heard from others.
At the beginning of the meal we overheard waiters telling other tables about the meal. At each table, the number of courses they stated varied from nine to eleven. Throughout the rest of the meal, we saw other tables get different courses to us. We were explained later that other guests may have different dietary requirements, which is fine, but when you're paying $186 per head, and someone is eating something that looks very interesting and you're not, then things can be confusing.
There was no menu or outline of the meal presented to us, so we were eating whatever they sent us. They did give us a run-down at the beginning of the night of each course and the main ingredients in case we had any allergies. They also told us we could request a particular meal if we had eaten at Tetsuya's before, but how can you remember ten courses explained by a waiter with no menu in front of you? We were given a copy of a menu at the end of the meal as 'souvenir', but that was completely pointless. At the beginning of the meal would have been better.
As for the food, it was very delicious, but I hate to say it, I've had just as wonderful meals for a more affordable price. Most courses seemed to have an ice cream or a 'foam' somewhere on the dish. Desserts were tasty.
