A major renovation at The Maid has seen a touch of class added to the iconic hotel. But regulars need not fear; the comfortable social hub has not disappeared but has just grown, with the old pub enhanced by a beer garden, courtyard, wine bar and a restaurant, Signatures. Though this is a contemporary place of fine dining, the pub-style warmth still remains with cosy leather lounges and friendly staff. Part of the reformation meant bringing a new chef on board, Christian Kohen. One taste of his dishes will reassure any doubting Thomas that the changes are all worthwhile, with dishes such as whiting wrapped in prosciutto and dill; and seared sirloin with abalone mushroom and soft truffled polenta.
