After a quiet refurb, Sahara at the Republic has transformed into Sahara One, a North African eatery which goes one step beyond its predecessor and offers a menu with a slight modern French accent.
Dishes on the menu which display this aforementioned lilt include a sirloin steak with cauliflower fritte, lyonnaise sauteed potato and a carrot and pea puree, served with cafe de Paris butter; or a classic ratatouille, featuring eggplant, capsicum and zucchini cooked in a tomato ragout and served with saffron rice.
This is not to forgo a strong North African influence, however; there's many a Morroccon-styled main, including a lamb tajine, and a popular Sahara mixed plate, featuring mergez sausage, marinated chicken, hummus and bread.
