Executive Chef Steve Houghton is under a lot of pressure running a restaurant in The Gold Coast's only five-star resort - luckily, he is more than capable of the task.
Breakfast and light lunches are available here, but the main event has to be the sensational dinner menu Houghton serves up every night. Twice-cooked sweet pork belly entrees give the night a distinctly Asian feel, before a roast grain-fed rack with wild mushroom jus lets you know you're in Australian lamb country. Finish off with a five-spiced poached pear with chocolate mousse and mint anglaise.
