Snagging a site in an old heritage building on the main eat street in North Hobart was an auspicious start for the team behind Restaurant 373, boding well for this fine diner. The modern European menu is clearly aimed at the upper end of the market, with creative twists on classic dishes that are sure to please the fussiest of foodies. Chef and co-owner Fabian Cristoph sees his role as taking diners on a culinary journey - this is food done with style and pride. There's no sense of being hurried out the door for the next diner at 373 - the owners want you to linger and reflect till they start coughing gently and turning the lights off, and lingering is not hard to do in this warmly furnished, comfortable spot.

You can't help feeling rewarded for your choice of restaurant when the generous little amuses bouches arrive with your drinks - try the soup of the day, house-made bread and dips, olives with porcini popcorn, all before even opening the menu. One of the favourites - with good reason - is the Bruny Island oysters done five ways, including natural with limoncello jelly, the unusual tea-smoked oysters and the shooter of the day. Aside from the menu, small touches such as the dim lighting and refined decor with sexy touches of dark red mark this eatery as a noteworthy newcomer.

A real gem
My husband and I had a lovely dinner with some friends several months ago. The food was really good but the only thing I can fault is that the portions were slightly sparce.

Service was great (something that often seems to be lacking in Hobart). All in all it was a satisfiying night. Well done to the team at 373!
