The classic favourites are all here - butter chicken, lamb rogan josh, vegetable vindaloo and so on - but you may find yourself drawn to the less familiar pleasures of bhuna chicken (a curry featuring fresh garlic, sliced onion, tomato, herbs and spices) or octopus jalfrezi (a lightly pan-fried spiced octopus with onion, tomato, capsicum and coriander).
