Housed in the lavish surrounds of the Sofitel Brisbane Central, Prive 249 presents an equally formidable fine diner, replete with gilded chandeliers and black glass tabletops, exuding elegance from top to toe. Also of note is the French-infused Modern Australian menu, devised by French chef Mathieu Astier, whose culinary creations include a yellow fin tuna sous-vide with baby fennel, orange, almonds, black olives and aged balsamic dressing; and a 380-gram, marble three prime Black Angus beef rib fillet with pommes puree and jus. Sure to be a decadent delight, Astier's five-course degustation menu offers a bit of everything, and optional matching wines.
