From the intimate booths and formal tables of the dining area, to the fireplace-lit, moody lounge space, to the marble-topped bar and its beer garden, Prime Wine Bar and Grill sets a stylish standard on Swanston Street.
It comes as no surprise that this cosmopolitan hotel restaurant and bar is the home to innovative global and mod-Oz cuisine and equally tantalising cocktails. The menu invites you to "debut" with kingfish carpaccio or stuffed zucchini flowers, followed by mains as diverse as homemade saffron and cracked pepper linguini and traditional Spanish paella. To finish, you'd be hard-pressed to choose between a self-saucing chocolate fondant (anything that involves self-saucing gets my vote) or a mango bombe alaska (a meringue sponge cake).
Of course, you may feel like a post-meal French Kiss (a Chambord, Baileys and vodka cocktail), unless you prefer to feel Melon Coly (a melon, peach liqueur and champagne concoction).
