Naturally, an icy cocktail from the bar is the best way to complete the picture. Part of the Holiday Inn in Darwin, Poolside caters to hotel guests, locals and even the oil workers, who come in for breakfast from 3am. Beyond the freakishly early breakfasts, the restaurant is open throughout the day and serves modern Australian cuisine, with an emphasis on local produce and distinctly Aussie ingredients. In the laidback surrounds of the restaurant, international visitors can savour their compulsory taste of kangaroo, emu or barramundi, while been-there-done-that locals can just relax with a juicy steak and that cocktail.
