Fresh from fine-dining stints at high end places like Siggi's, owner Philippe Beylot has taken a casual turn and Balmoral residents are reaping the benefits.
His latest venture, Pompidou, takes over the old space of the Wicked Sisters Cafe, even going so far as to retain the same chef. There are a few similarities but don't expect a cookie cutter copy. For one thing, Pompidou takes the focus off corporate catering and places it squarely on repeat customers. Expect strong and rich coffees coming thick and fast to go along with sumptuous, Euro-inspired cafe fare. Almost as a backlash against his fine-dining pedigree, Beylot has intentionally kept everything at Pompidou simple, rustic and welcoming.
