Brisbane's fine dining scene continues to grow - and glow - with the addition of mod-Oz/European haven Peak Fine Dining. A more upmarket venture from the team at the attached Iceworks Restaurant Bar Lounge, Peak offers a handsomely mood-lit environment in which to enjoy lunch and dinner affairs.
Head chef James Williams creates a seasonal menu that speaks of his supreme expertise, having cooked for celebrities including Madonna and Kylie, and having worked in restaurants such as Michael's Restaurant, Restaurant II and Seasalt. Some of his masterpieces include the assiette of duck with silken parsnip puree and cherry vinegar jus, and the bouillabaisse of local seafood. Meanwhile, a scan of the wine list reveals an evergreen collection of Australian, New Zealand, Spanish, French, Italian and German varietals worth a tot or tipple.
