Must Margaret River


Following the astronomical success of the multi-award-winning Must Winebar in Perth, Must Margaret River treads the same trendy formula with effervescent style, presenting a highly sophisticated wine bar for observant oenophiles and enthusiastic epicureans. Surrounding the bar are impressive racks of wine including practically everything from the Margaret River region, all of which can be devoured heartily during lunch, dinner or supper at the bistro.

Chef Russell Blaikie and head chef Chris Cheong lead a team devoted to fine French cuisine infused with the unique tastes of local produce. Their show-stopping dry-aged Butterfield beefs come direct from the Stirling Ranges, and are refrigerated in an on-site meat ageing cellar. Once ready, these dishes can be adorned with a choice of bearnaise or green pepper jus, and extras like French mustard, onion-cabernet jam, and salsa verde. Indeed, Must is a Margaret River must.

big fish in a small pond
Must is trying to be the Big Fish in a Small Pond and competing against the outstanding winery restaurants in the Margaret River area. They aren't succeeding.
Two of us booked in for dinner on Friday and were told we had the option of coming at 530pm or 830pm. We chose the earlier sitting but wondered why we had to be there at that time and not choose a time which suited us. Most other diners did not arrive until after 630pm.
The wine list is nowhere near as extensive as Must's City counterpart. I had trouble finding a wine on the list which would suit my taste. It required two waiters to come up with an option and I did enjoy it.
We ordered a steak which was excellent, although Must is following the trend of not serving any greens with a meal so you HAVE to order an expensive side dish. There were a number of vegetarian options which was good to see. I avoided the gnocchi which was heavy in mushroom and ended up with a vegetarian burger with a patty made primarily of mushroom. Blah! The bread was lovely and soft and dissolved in the mouth, the leafy greens in the burger were crisp and fresh but a $21 burger needs more than patty, cheese and leafs. I was rather dissappointed.
Even more disappointed when dessert arrived. The icecream sundae was so overloaded with cream that I was unable to locate one of the two tiny scoops of house-made icecream. The chocolate sauce had sunk to the bottom of the glass and what I tasted of it was nothing special.
There are so many fantastic dining options in Margaret River, I'd go elsewhere for a decent meal next time.

Outstanding lunch!
Husband and I had lunch here last week. We were impressed with the service and the food we got. The steak was perfectly cooked and the presentation of the food was very beautiful. Also, there is a large selection of local wines here. Would definitely recommend this place to family and friends.
