For every average restaurant that serves nondescript pizza and pasta, there is another trattoria on the other end of that scale, standing tall as one of the last vestiges of true Italian cooking.
The individual responsible for this rare stamp of "authenticity approval" at Modo Mio is head chef Giampaolo Maffini, who was recruited directly from Milan to head the kitchen at this venture in the bustling Burswood Complex. Maffini's northern Italian roots shine through in every aspect of the menu, from the attention to detail in the handmade pastas to the care taken with each pizza as it comes out of the woodfire oven.
