Rebranding Gianni's, the stalwart of Brisbane's dining scene, executive chef Javier Codina turns his multi award-winning fine diner into a more accessible taste of his Spanish heritage. Offering up such Spanish delights as piquillo peppers filled with tuna salad, serrano jamon (dry-cured ham) and rich La Mancha manchego cheese plates, Codina has put his stamp firmly on this menu. Proving that he is more than a one-trick pony, Codina also introduces more modern dishes to the restaurant, such as the pork cheek with Moreton Bay bug, scented lemongrass and ginger. It's a close call as to whether the Asian fusion dish takes out top spot on this stellar menu over the chef's personal paella (only served Friday lunch or by appointment).
