A tequila bar it may be, but Maya is no Tex-Mex taco slinger. Expect modern and innovative cuisine here, based in classic Mexican recipes and augmented with fantastic, fresh, local produce. This synthesis of differing styles leads to such dishes as the duck quesadilla, an oven-roasted duck breast served with spicy hoisin sauce, pan-fried veggies and a cooling cucumber chutney. Conventional? No. Tasty? Definitely.
