Marque IV
This waterfront addition to Sullivan's Cove has an upmarket ambience (enhanced by the yachts and cruisers moored nearby), and comfy couches for lounging upon with aperitif in hand. Artworks by local artist Ian Bond line the walls, while the linen-clothed tables are surrounded pale wood chairs. Chef Justin Harris is intent on delivering innovative flavours that show Tassie produce in its best light, from Bruny Island oysters through to Dover ocean trout. There's even a fur seal lurking in the water nearby, waiting for fishy discards from diners.
