The constant, repetitive thump of dough hitting stainless steel may not be the most inviting sound when you first walk into a restaurant, but for those in the know, the sound of hand-pulled noodles being, well, pulled is like music to their ears.
Contrary to the name, Kungfu Ramen is where you wanna head for fried noodle dishes, pan-fried dumpings and chargrilled skewers. There is ramen on the menu, but it's the more reserved, Chinese-style broth than the more robust Japanese shoyu- and miso-based ramen most people are used to.
