For the centrepiece of the new Opera Kitchen on the lower concourse of the Sydney Opera House, you couldn't ask for much better than this artistic homage to Japanese cuisine.
It's headed by Kenji Nishinakagawa, one of Australia's foremost sushi chefs, so expect the sushi and sashimi delicacies here to be without peer. The salmon toro sashimi is a must-try if you've never experienced the deep belly flesh in the hands of a master before, while Kenji's special roll (tempura prawns with cucumber and flying-fish roe wrapped in thinly sliced seared salmon topped with special sauce) is an exercise in opulence.
