So you probably already know this latest Collingwood eatery is from first season MasterChef alumni Chris Badenoch and Julia Jenkins, and if you know that, then you probably also know it's a testament to Chris's two passions: meat and beer.
If you didn't know this already, it's pretty self-evident as soon as you walk in. The pig's trotter door handles and giant screen-print of a dressed rabbit carcass allude to the meat side of things, while a drinks menu that is 240 ales strong and lists everything else under "not beer" is a not-so-subtle hint as to the beverage leanings here.
What you may not know about Josie Bones is the transformation this space underwent to get to this point. Some may not recognise the totally refurbed space as the former site of Temple Bar, famous for the raunchy exploits of the Manly Sisters Drag Show.
As you would expect, Chris's nose-to-tail philosophy is a key theme of the menu, and the smart money is on his penchant for offal coming to the fore in the near future. Starters and mains sprawl unfettered on the menu in the flavour-of-the-month share-plate style, so expect to see plenty of unfashionable cuts prepared with care, knowledge and clever beer-matching throughout.
