This Jaws restaurant opened its doors in 1995, making it one of the first rotating sushi bars (or, sushi trains) to come to Australia. Since then it has become a mainstay on the Perth dining scene, spawning several other franchises. This restaurant somehow manages to walk the fine line between accommodating changing Australian tastes while still remaining true to traditional methods of Japanese cuisine.
