Chef Charles Greenfield prides himself on making dishes fresh to order with the best possible ingredients, just as they do in Japan. There is a menu, which is written daily and includes sushi and sashimi platters, oysters Japanese-style and nori rolls, but you'd be wiser to put yourself in Greenfield's hands and ask him what he considers to be the pick of the day. The wine list offers half a dozen reds and whites, as well as Japanese beer and three sakes. And should you really feel like a splash out, try the $200 'ecstasy' platter, but be sure to call and order it a day in advance. A rare treat
How anyone could not love Jamon is beyond me. It's rare that you get such personalised attention by a chef, and be delivered food with so much passion and skill. If you show a keen interest about food, Charles will spend heaps of time talking to you about what he prepares and why, which is a fascinating experience in itself. This is a meal not to be missed.

Very special
I have just seen this review (Disappointing) even tho' it's nearly a year old and I have to disagree. For Melbourne this is a unique dining experience and there was plenty of imagination displayed when we were there. There are other unique dining experiences but this does not detract from Jamon Sushi. It's much better than franchise outlets and, although one would not want to eat there every week, it's a very special place with a very special chef.

Disappointing!!!!
Having read a few 'expert' reviews on Jamon, I was eager to indulge in the experience myself. Being greeted by Chef Charles Greenfield, I was left with an anticipating appetite of great expectations. The food was undoubtedly fresh, and it was a thrill to watch the dishes take form in front of you. Unfortunately the result was far from the mark. No restrictions were put on the offerings, but imagination lacked and inspiration regrettably failed to shine. Presentation fell below franchise sushi outlets and pretentious attitude will spoil a night out! I would place this menu mid-range amongst Melbourne's ever-improving Japanese restaurants. A unique dining experience!!!!
