This eatery, located in Haymarket's Food World, is renowned for creating what many Sydney foodies declare to be the best tonkotsu - Japanese pork bone soup - in all of Sydney. The soup is constructed by boiling 120 kilos of pork bones in water until these bones are completely broken down; yielding a thick, gelatinous broth that is then served with ramen noodles, grilled pork spare ribs, fermented eggs and a selection of pickles. Those who eat here delight in the soup's ability to coat the inside of the mouth with a thick yet delicious coating of pork flavour.
