Following a huge renovation, this century-old Waterloo institution has sprouted a new bistro and a cosy lounge bar in addition to the more traditional sports bar. Joining up with some of the best providores in Sydney, their quest is to offer 'expensive restaurant' meals at cheap, cheap prices. The smart bistro space dispenses with the formality of linen and table service and instead focuses on their gourmet carvery cuisine. Chef Nick Merrick takes advantage of seasonal produce to create a constantly evolving menu of hearty, meat-focused fare. Merrick's specials might include an aged scotch fillet with Irish champ and beans or a honey-glazed rack of lamb with spiced pumpkin and fresh peas. After dinner, snuggle into the soft couches of the Parlour bar and enjoy live music or pub trivia.
