Garagistes


Garagistes may just be the most exciting restaurant in all of Hobart. It is an amalgamation of different culinary ideas that combine to create something truly unique. The restaurant is part Slow Food movement, part Japanese and part naturalist, yet still manages to be wholly Tasmanian.

Garagistes is named for a group of winemakers from the Bordeaux region who worked outside the European appellation rules; the fact that this rustic-chic warehouse eatery is housed in a former motor garage is merely a happy coincidence. What isn't a coincidence is a 40-odd page wine list (maybe including a few not-so-traditional Bordeaux reds) that lists wines by varietal as well as producer.

If the wine was all Garagistes did then it would be impressive, but chef Luke Burgess's bold and innovative cuisine is a sight to behold in itself. From the looks of his provocative menu, his time working with the likes of Tetsuya Wakuda and Rene Redzepi was well spent.

The complete dining experience, finally available in Hobart...
Food to die for, excellent, affordable artisanal wine selection, superb service and a great atmosphere - this is the Garagistes experience. The "snacks" selection are a must - my partner and I love the shared plate concept and we started with saltfish fritters, marinated mussels with caramelised onion and croutons, house cured tesa with pickles and finally the crumbed and fried pork stuffed olives with smoked paprika ailoi - all were amazing and, with well priced wines, made for a great beginning to a memorable night. We loved the quails eggs, fennel, broadbeans and roast chicken skin and after this dish my husband declared the chef "inspired" and advised that we would no longer need to travel interstate for great food! Larger plates followed and were totally memorable like the roast wessex saddleback and chargrilled jack mackerel. Desserts are a must and my hot ricotta dumplings with salted malt caramel was just sublime. We love this restaurant - it has an ever changing menu and we can now dine out each week. Congratulations to the Gragistes team. To locals and tourists alike, if you haven't dined there yet make sure to do so - this is a restaurant that will thrill and delight!
