Continuing the north shore revival started by Dietmar Sawyere's Ad Lib Bistro, Gaon has also flung its doors open in the sleepy suburb of Pymble.
Not to be confused with Goan cuisine (the spicy north Indian cooking style responsible for the fiery vindaloo curry), Gaon is modern Japanese cuisine at its best. The usual Japanese classics are all present on the menu, from sushi and sashimi to tempura and miso soups, but it's the artful presentation and deftness of touch that sets this classy diner apart.
