Housed within the Sydney Observatory Hotel in the Rocks, Galileo, with its eight-course degustation menu and optional matching wines, and decor reminiscent of a 17th century Parisian boudoir, is an elegant dining experience.
The restaurant's servers are extremely focused and knowledgeable about the dishes and opulent wines. Chef Masahiko Yomoda has created a menu which leaves you full but at the same time wanting more, fusing classic French flavours with precise Japanese execution. On offer is the house-cured ocean trout delicately prepared with a light-as-air wasabi cream; and expect to be moved by the lobster salad, paired with cauliflower cream and orange powder.
A mix of young and old enjoy this refined restaurant experience, with fitting classical guitar music from the adjoining Globe Bar floating about the room in agreement with the low hum of chatting patrons as they enjoy main courses such as the duck and foie gras pie. The wine list matches the mood with veritable aplomb: Old World wines such as the Domaine Marcel Deiss pinot blanc are juxtaposed with New World drops such as the Hans Herzog Viognier.

A Great Find
A friend of mine took along to Galileo and I have to say I was very pleasantly surprised, this place was a great find. The degusation menu was extensive without being too excessive, with a great range of flavours, backed up by a good choice of wines. I also liked the setting very classic and a little old school. Have to take my hat off to the service, as we were there for a birthday which they overheard us discussed and as result brought out an extra dessert.

Disappointment Dining Experience in 5 Stars Venue
Galileo new chef & service were a great disappointment compared to our 1st visit few years back. We ordered a red wine with our meal but the waiter did not have the courtesy to inform us earlier that the wine was unavailable. Leaving us waiting for our wine to arrive after our entree were served. For a 5 Stars hotel/restaurant, I found it very unacceptable to have to refill our wine glasses as the waiters seemed to ignore our table completely, not to mention our water glasses were never refilled either. One of us ordered the duck foie gras pie and it came with a complete burnt pastry. Finally we were given a wrong bill at the end of our meal!!!

Superb Dinner
We went to Galileo interested in trying the flavors from Galileo's new chef -he definitely lived up to our expectations. We had a degustation menu for what we thought was a very reasonable price. All the dishes where tasty but the ocean trout was especially good. Overall a really great night, with friendly and professional staff. Look forward to finding a good excuse to return.

Extraordinary flavours...
Galileo's degustation menu is the best that I have tried (my partner seconds this opinion!). The food was nothing like we have tasted before and was a really nice experience. The decor is antique and Victorian-like, so if you want to step back in time with great food - this is the place to go. For breakfast, the price tag might be a little overrated compared to the food however, it's still a good dining experience and would be a great present for someone.
