It's the Hilton, but not as we know it. It's not the plush chain of luxury hotels but rather the 'Hilton Hilton', as it is known in Adelaide, a hotel that has undergone a major reconstruction in recent times. Its restaurant, Fedora's, plays a large part in its new lease of life. The Franzon family are serious about making this a restaurant that is a cut above usual hotel eateries, bringing culinary whiz James Colley in to unleash his skill in the kitchen. On offer are dishes with more than a hint of Mediterranean allure, as Colley skillfully chargrills everything from steak to duck to pears.

good and not so good
The service was mostly very average, one waiter was very good but he unfortunately disappeared to another table. Other staff just pushed through to deliver drinks and food with not so much as an excuse me. Then an unfortunate accident left two of our party with a glass of champagne spilled on them. Although the staff were apologetic they never returned to clear away the wet table cloth, leaving one lady to sit with a wet table cloth in front of her. As for the meals one needed to be sent back as the person could not even chew it, let alone cut it, and other meals were quite cool by the time they got to us. I need to add that the chicken, salmon and duck were fantastic, as were the tasting plates. Understandably it was a busy night, but all in all a disappointing experience for some of our party. Perhaps we will try again on a quieter night as we have heard so many great reports, the menu is great and the place looks tops after the renovation. Might have been just one of those nights!
