Restaurant Information
Etch
It seems to be all the rage these days; artisans of note giving back to the masses by creating options that people on any budget can afford, and the culinary sphere is no different. Justin North, patriarch of upmarket Becasse, has created a diffusion restaurant in Sydney's InterContinental, offering the same great produce but at a more user-friendly price. Under North and head chef James Metcalfe, diners can expect dishes ranging from steak and chips to confit duck croquettes with sauce gribiche; and sweet corn soup with blue swimmer crab and sherry cream - the latter already proving a hit among diners. For mains, the Gundooee wagyu beef with both a brisket and a piece of sirloin topped off with that very French accoutrement, Cafe de Paris butter, is bound to appeal, as will the slow-roasted leg of saltbush lamb cooked in a Provencal style and accompanied by mixed garden vegetables.

Etch
Service at Etch varied between staff members, from stiffly formal to relaxed and cheerful. Out waitress - the relaxed and cheerful one - was polite, informative and happy for a chat. Drinks came quickly (and it was nice to see some Lord Nelson on the beer list). Although it's a nice personal touch when staff fill up your water glasses instead of leaving a carafe on the table, the staff weren't too attentive about noticing when our glases were empty.
The food, from the incredible fried goat's cheese with honey and lavender to the flathead with potato fondant, was delicious. As others have mentioned, the servings were small for the price. Desserts were a little more generously portioned - my sort of place! - and were rich and inventively flavoured. The catalan creamed rice was a subtle, mellow dessert recommended for anyone who is feeling a little full, but if you have a sweet tooth, the treacle and walnut pudding with white coffee ice cream is wonderful.
The restaurant is tastefully appointed, with an unintrusive electronic soundtrack. A lovely dining experience - not mind-blowing, but highly recommended.

Lovely place but hardly cheap!!
Went with 4 friends for a farewell dinner. Have always been a fan of Justin North and Becasse, so was looking forward to good food at a 'user-friendly' price.
My entree of duck croquettes at $24 was lovely but there were only 2 small ones - and that's not cheap. The sweetcorn soup is sublime. We also had the jamon & manchego plate - $18 for 3 transparently thin biscuits slightly larger than a 50c piece, each with a transparent slice of manchego and a medium-sized slice of serrano ham. It was delicious, but barely a taste at $9 per biscuit!
I had the wagyu beef as a main - $43. Yes, you get the meal as described in the main page (above), but the 3 slices of wagyu sirloin are the size of my little finger (I'm a smallish female) and the 2 pieces of brisket were both only about the size of a 20c piece (though amazingly tender and lovely, it must be said). But for $43??!!
All 5 of us ended up having dessert as we were so hungry after eating nibbles, entree and main. With 2 bottles of $56 white, the bill was $100 a head. And we were still hungry!
I've come across this before - in an attempt to keep prices down the restaurateurs reduce the portions and maintain 2008 prices. The food is very good, but user-friendly they ain't, and the portions are pretty tiny for the price! Be warned!
