Escape the throngs at Justin Hemmes' swish Establishment bar and take the elevator up to Peter Doyle's (ex-Celsius) French-infused foodie wonderland. You have to pay to play at this super-seasonal gastro-temple, but the rewards are exceptional. Prepare yourself for such pleasures as Moreton Bay bug with scampi, leek, cavolo nero and espelette pepper emulsion; or maybe roasted and boned squab pigeon with smoked onion and hazelnut parfait. Awards for Doyle's dazzling modern creations continue to pour in, including a rare three hats by the SMH Good Food Guide, and a gong as the country's best restaurant by the Australian Hotel Association. The eye-bulgingly long wine list even includes a first-class selection of half bottles.

Delicious
We went for my b'day. Very quiet setting, no views of anything! However the food was fab, a real open your senses experience. We had the five-course menu. Everything food-wise was perfect. The room is a gorgeous room, but it was so quiet & dull as well. Service was also great. Would go again, tho after about a year & hopefully they would have made the decor a lot more colourful & inviting.

Everything was great but there was nothing special
On the overall experience, I would say it was boring. Food was perfect but there was nothing unusual or inspirational. Service was good but lacked any personality. On atmosphere, it's a lovely room that is not put to its best use. Sadly, it seems somewhat sterile and bland. Not somewhere I would take someone for a special occasion.

Superb
We went to Est. prior to the ballet which started at 7.30pm. The staff were superb in helping us have a glass of Dom, main meals and dessert all in little over one hour. There was a choice of three vegetarian dishes, also.
