Drift has fast become a symbol of the quintessential, never-give-up Australian attitude. The story of its revival after the Queensland floods is now the poster boy for the state's recovery effort.

In its brand new digs, set overlooking the 18th green of the Brookwater Golf Course, there are few better places for this darling of the Brissie dining scene to make its triumphant return. (And yes, it is well away from the water's edge this time.)

Just like its previous incarnation in Milton, Drift has retained the services of Romain Bapst at the helm of the kitchen, and his return menu is impressive to say the least. The faith shown in financing the revival of Drift has been repaid in full with a menu that reads more like an homage to Queensland's premier produce. As has become Bapst's calling card, he manages to bring refinement and subtlety to traditionally comforting foods. Salt and pepper calamari is elevated by a pairing of sweet and sour Mediterranean vegetables; while a sauteed Morton Bay bug tail coupled with handmade gnocchi, chestnuts, peas and sage transcends rustic charm into the sublime.

Like the seasonal, made-to-order souffle that reigns supreme over Drift's dessert menu, we've had to be patient to see the end result of this restaurant's resurgence. But just like the souffle it's well worth the wait.

Devine!
We visited Drift at Brookwater for a family lunch. The food and the service was excellent. The waiter we had was extremely knowledgeble both on food and wine and how they complimented each other. The food was extremely tasty and generous in serving size. I had the linguini for lunch which was delish. Dessert! Just as yummy was the profitteroles with hot chocolate sauce. I have been here before for a work function and the famous sandcrab lasange - you can tell why it is famous when you take a bite! The resturant is set overlooking the beautiful Brokwater golf course. Absolutely recomend Drift for both the food and service!
