Following a $2 million designer fit-out of gleaming aqua tiles, chocolate and wicker upholstery and shiny metal finishes, this watering hole has undergone a flashy metamorphosis. However it has still managed to remain true to its pub heritage, even retaining some original fixtures such as the antique open fireplaces. Upstairs, the open-air terrace complete with hanging wicker chairs overlooks Crown Street, and is an ideal spot in the afternoon. The seating extends inside to the funky lounge bar, where you can sip a chilled strawberry caipiroska, or one of the many boutique beers available on tap. The bistro serves up classic dishes such as salt and pepper squid and steak, as well as reintroducing Surry Hills to the culinary delights of the classic prawn cocktail. Since first opening its doors in the late 1850s, The Dolphin has undergone many renovations, and changed hands nearly as many times. However, throughout it all, the hotel has held onto its name firmly - earning it a loyal and local following.
