This upmarket eatery centres most of its menu around seafood, much of which is still swimming in the tanks that line one wall as you head to your table. The seafood dishes might range from a traditional Singapore chilli mud crab to a more unusual wok-fried live lobster with French goose liver pate. The mix of tradition and the avant-garde extends to the rest of the menu, which includes braised Japanese beche de mer with fish maw and Chinese fungus. For dessert, the sublime double-boiled bird's nest (in crystal sugar, lotus seed, creme de almond or creme de chestnut) comes hot or cold and is worth the splurge.

Lunch without Yum Cha
We decided to pass on the Yum Cha and ordered four dishes between five of us which adequately covered even the hungry folks in our group. Try the Soy Chicken claypot; it is marvelous. We also had the Ma Po bean curd which was perfectly spiced for us (not too hot just right). The black cod, which was recommended by the staff was wonderful - sort of sweet, moist and well browned. Service was a bit erratic but probably due to the large Yum Cha groups around us. Take the time to order from the menu, it is well worth it.

Some of the best yum cha in Melbourne!
Unlike other yum cha restaurants in Melbourne on a Saturday, Crystal Jade was not too crowded and the noise level was quiet enough so we could have a conversation at our table. We had to wait 10 minutes for a table, which was totally worth it. The food was fantastic! Highly recommend the snow pea and prawn dumplings! My brother has travelled through China and claimed Crystal Jade to be some of the best yum cha he's ever had. And we ate like kings for $20 a head. I hate to give such a glowing recommendation for fear that it will become even more popular, but definitely worth a visit.
