Standard comfortable hotel decor (padded chairs, parquet floors) is elevated by ceilings that soar far above diners, and by views over the river and the CBD - a fascinating vista for travellers and locals alike. Specialising in buffet food (although an a la carte menu is also available), Conservatory's curved bars are laden three times a day with an eye-popping array of dishes. Chef Kosta Ganotis specialises in seafood and his buffet selection is sure to include overflowing bowls of vivid prawns, freshly shucked oysters glistening in their shells, and a range of fish dishes that draw inspiration from both East and West. While the temptation to gorge on prawns is great, the sight of Conservatory's chocolate fountain provides an effective incentive to save room for dessert.
