Though he's been supplying Sydney's top restaurants with fresh seafood for years, his eatery in the City Westfield was John Susman's first venture into cooking and serving up the goods. Now, with its overwhelming success, the Cloudy Bay Fish Co has branched out again, this time in the Opera Kitchen underneath Sydney's iconic Opera House.
As you'd expect, the seafood on offer here is all sustainable, fresh as can be and cooked to your liking. The plank-roasted king salmon is a winner and already hugely popular with tourists and corporates alike.
